Preparation
- Blend in all the patty ingredients, except the couscous and the wheat gluten, in a high powered processor.

- In a food processor, add the walnuts and process until granulated. Put aside in a bowl.

- 1 Block Firm Tofu (18 oz or smaller)
- Burger Buns
- Lettuce

- Chilli Mayo
For the Marinade:
- 2 Tbsp Soy Sauce
- 1 Tbsp Date Honey or Maple Syrup
- 1 Tbsp Peanut Butter
- 1/2 tsp Chili and Garlic Spice Powder
Preparation
- Dry and press the tofu using a tofu press or keep it wrapped in a muslin/cotton cloth or paper towel with a heavy and flat object on it like a book.
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Cut the pressed tofu into four squares.
- On a baking tray, put parchment paper, and place the tofu squares on it. Pop it into the oven for 20 minutes, flip the tofu over, and bake for another 20 minutes.
- In a mixing bowl, add in all the marinade ingredients and mix together. Place the baked tofu into this marinade and leave it for a minimum of 20 minutes.
- Pick up the tofu, drain off the excess marinade, and place it on a heated pan with oil.
